This recipe adapted from Nobuyuki Matsuhisa's "Nobu Now" (Clarkson Potter, 2005)

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 24

1/2 red onion, halved, thinly sliced, and kept in cold water
1/2 cup fresh cilantro leaves
3 jalapenos, thinly sliced crosswise into rounds
1 large egg, chilled
3/4 cup ice water
1 cup plus 2 tablespoons all-purpose or low-gluten flour, chilled
Coarse salt and freshly ground black pepper, for serving
2 tablespoons freshly squeezed lemon juice, for serving
2 tablespoons shi chi mi (Asian hot pepper seasoning), for serving
1/2 cup plus 2 tablespoons rice vinegar
1 tablespoon soy sauce
1 1/2 teaspoons freshly squeezed lemon juice
6 tablespoons sugar
2 1/2 teaspoons sea salt
3/4-inch square piece konbu
Vegetable oil, for frying
All-purpose flour, for dredging
3 pounds assorted seafood, such as shrimp (peeled, deveined, and butterflied), Alaskan king crab legs (shells removed), and sea urchin (left whole)
1 pound assorted vegetables, such as Japanese eggplant (cut crosswise into bite-size pieces, slice through cut end, not all the way through, every 1/4 inch to make a fan), hearts of palm (sliced 1/4 inch thick), sweet potatoes (sliced 1/4 inch thick), eno
1 cup Nobu's Dashi
1/4 cup soy sauce
1/4 cup mirin
Grated daikon, for serving
Minced ginger, for serving

Steps:

  • Prepare the Sweet & Sour Ponzu Sauce; Stir together all ingredients in a small bowl; let stand overnight. Strain.
  • In a Dutch-oven, heat 3 1/2 inches of oil to 355 degrees. Place flour in a pie plate; set aside.
  • Prepare Tempura Batter; Combine egg and iced water in a medium bowl; gradually add flour, whisking gently until just combined. Batter will be lumpy.
  • Prepare Traditional Dipping Sauce; Combine dashi, soy sauce, and mirin in a small saucepan; heat until just before boiling point. Remove from heat; let cool slightly. Pour into a small serving bowl; add about 1 tablespoon each daikon and ginger.
  • In small batches, lightly dredge pieces of seafood and vegetables in flour, dip in batter, and using tongs, fry in the hot oil, being careful not to overcrowd the pot, until lightly golden and cooked through. (Leave enoki and shiitake mushroom caps plain, battering just stems.) Transfer to a paper towel-lined baking sheet to drain. Allow oil to reheat between batches. Repeat with remaining ingredients.
  • Transfer vegetable and shrimp tempura to a serving platter; serve with traditional dipping sauce. Place sea urchin tempura on a small serving plate; serve with salt, pepper, lemon juice, and shi chi mi on the side for dipping. Arrange king crab tempura on a serving platter, and garnish with red onion, cilantro, and jalapeno; pour Sweet & Sour Ponzu Sauce over. Serve immediately.

TEMPURA VEGETABLES

Tempura Vegetables image

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Vegetables     Eggplant Recipes

Number Of Ingredients 14

1 medium sweet potato, sliced 1/4-inch thick
1 small Japanese eggplant, thinly sliced
1 medium zucchini, thinly sliced
1 medium yellow squash, thinly sliced
Broccoli, trimmed and separated into florets
Snow peas
Wild mushrooms, such as oyster or maitake, separated into bite-size pieces
Shishito or Padron peppers
Tempura Dipping Sauce, for serving
Granulated sugar, for serving
1 large egg yolk
3/4 cup very cold sparkling water, plus more if necessary
1 cup cake or pastry flour, plus more for dredging
Peanut or cold-pressed sunflower or safflower oil

Steps:

  • Heat 2 inches oil in a wok or heavy pot over medium heat to 350 degrees.
  • Mix yolk with water using fat wooden chopsticks. Add the flour all at once and mix just slightly. There should be large lumps of flour and a rim of flour dust around the bowl. Over mixing will result in a heavy batter coating. It is best to mix the batter in this amount, and repeat as necessary. Prepare ingredients, dry them, and dredge lightly in flour before dipping in batter.
  • When oil is hot, dip the vegetables one at a time into batter to coat completely, and then allow excess to drain into bowl. Working in batches, about 6 pieces at a time, and using a spider, carefully submerge vegetables in oil. Cook, turning once, until light golden, puffed and cooked through, about 3 minutes for most vegetables. They should be tender when pierced with the tip of a paring knife. Transfer to a baking sheet fitted with a wire rack to drain. Serve with dipping sauce. To serve sweet potato tempura for dessert, sprinkle with sugar and serve immediately.

Tempura image

Provided by Alton Brown

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 13

5 ounces unbleached cake flour
5 ounces white rice flour
1 1/2 quarts vegetable oil
1 large egg, beaten
1 1/2 cups cold seltzer water
1/2 cup vodka
5 to 6 ounces sweet potato, peeled and cut into 1/8-inch thick slices
Kosher salt
1/4 pound fresh green beans, trimmed
8 stems flat-leaf parsley
1/2 pound shrimp, 31 to 35 count, head and tail-on, peeled and deveined
1/2 pound tilapia fillets, cut into 1-inch pieces
Ice

Steps:

  • Whisk the cake flour and rice flour together in a medium glass bowl and divide it in half. Set aside.
  • Heat the vegetable oil in a 5-quart Dutch oven over high heat until it reaches 375 degrees F on a deep-fry thermometer.
  • Once the temperature reaches 365 degrees F, whisk the egg, seltzer water and vodka, in a medium mixing bowl and divide it in half. Put half of the mixture in the refrigerator to reserve. Pour half of the liquid mixture into half of the dry mixture and whisk to combine, about 10 to 15 seconds. Some lumps may remain. Set the glass bowl in a larger bowl lined with ice.
  • Dip the sweet potatoes into the batter using tongs, drain for 2 to 3 seconds over the bowl, and then add to the hot oil. Adjust the heat to maintain between 375 and 400 degrees F. Fry 6 to 8 pieces, at a time, until puffy and very light golden, about 1 to 2 minutes Remove to a cooling rack lined with 3 layers of paper towels set over a half sheet pan. Sprinkle with salt, if desired. Repeat the same dipping and frying procedure with the green beans and parsley leaves. Put the fried vegetables on a serving platter and serve the as an appetizer while preparing the seafood.
  • Whisk together the remaining halves of dry and liquid batter ingredients as above and repeat dipping and frying with the shrimp and fish fillets. Sprinkle with salt, if desired, transfer the fish to a serving platter and serve immediately.

Quick and easy tempura vegetables make for a great appetizer or side dish. Recommended vegetables are: bell pepper slices, green beans, bite-sized broccoli or cauliflower, mushrooms, and zucchini strips. GLUTEN FREE TEMPURA BATTER

Gluten Free Tempura Batter image

After almost 20 years without sweet & sour chicken balls, I had a eureka moment. I was cooking pancakes, when it dawned on me that the batter was almost thick enough for deep frying, and it browned nicely. All the other recipes I'd tried refused to brown. This batter fries up light and crispy.

Provided by Queen Bead

Categories     Free Of...

Time 35m

Yield 1 1/2 cups

Number Of Ingredients 8

3/4 cup gluten-free flour (Gluten-Free Flour Blend)
1/2 teaspoon guar gum or 1/2 teaspoon xanthan gum
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon sugar
1/2 cup milk
2 eggs
2 tablespoons cooking oil

Steps:

  • Mix dry ingredients in a bowl.
  • Mix liquid ingredients in separate bowl.
  • Combine dry and liquid ingredients and mix well. Let stand for 10 minutes.
  • For chicken balls, dip 1/2" cubes of pre-cooked chicken in batter.
  • Drop battered chicken balls into deep fryer preheated to 375°F.
  • Cook until golden brown.
  • As you are cooking the chicken balls, occasionally skim the stray bits of crisp batter from the oil. They make a wonderful crispy accent to a salad.
