CUCUMBER LYCHEE SAKE

4 long thin slices fresh ginger
1 cup water
1 cup sugar
2 English cucumbers, plus extra slices for garnish
1/2 cup sake
1/4 cup lychee juice, plus lychees for garnish

Steps:

  • Make ginger simple syrup by combining ginger, and 1 cup water and 1 cup sugar in a small saucepan and simmer until sugar has dissolved. Set aside to cool. Peel cucumbers and cut half of 1 into thin slices. Puree the remaining 1 1/2 cucumbers in a blender. In a shaker, combine sake, pureed cucumber, ginger simple syrup and lychee juice. Shake to combine and serve in ice filled glasses garnished with lychee fruit.

3 (1/4 ounce) packets unflavored gelatin, Knox
6 ounces sake
10 ounces simple syrup
1 tablespoon fresh ginger, peeled very finely minced
12 ounces vodka
6 ounces lime juice
1 large cucumber, 25-35 thin slices
tiny-julienne candied ginger (optional)

Steps:

  • In small bowl, sprinkle gelatin over the sake and let soak for 5 minutes to bloom the gelatin.
  • In a small saucepan over medium-high heat, bring the simple syrup and ginger just to a boil. Remove from the heat. Add the gelatin and sake mix, and stir to completely dissolve the gelatin. Stir in the vodka and lime juice.
  • Carefully pour the mixture into a PLASTIC WRAP LINED 8" square glass baking dish. Cover tightly w/ plastic wrap, not touching the liquid surface, and refrigerate until the gelatin is completely set, preferably overnight.
  • To serve, unmold the gelatin onto a parchment- or wax paper- lined baking sheet. remove the plastic wrap and cut gelatin into desired shapes. i like to use a 1 inch round cutter to cut the gelatin into squares.
  • Serve each piece on a slice of cuke and top with gold and/or ginger.

2 cups/280 g peeled, seeded, and diced cucumber, frozen
1/2 cup/85 g green grapes, frozen
1/4 cup/10 g firmly packed fresh mint leaves
2 tbsp agave nectar
Pinch of sea salt

Steps:

  • Combine the gin, sake, lime juice, cucumber, grapes, mint, agave nectar, and salt in a blender. Blend until frothy and smooth.

1 large (1-lb) seedless cucumber (usually plastic-wrapped)
2 cups water
2/3 cup sugar
1 tablespoon finely grated peeled fresh ginger
2 tablespoons fresh lemon juice, or to taste
1 (720-ml) bottle chilled dry sake
2 tablespoons finely chopped crystallized ginger (optional)

Steps:

  • Cut cucumber crosswise into three equal pieces. Peel and chop 2 pieces, then put into a blender. Peel 4 lengthwise strips from remaining piece, leaving stripes of green, then halve piece lengthwise and core. Thinly slice crosswise.
  • Add water, sugar, fresh ginger, and lemon juice to blender and purée until smooth. Pour through a medium-mesh sieve into a pitcher, then stir in sake, crystallized ginger if using, and cucumber slices. Chill, covered, until ready to serve, up to 2 hours. Serve over ice.

  • Pour mixture evenly into lime halves (about 2 1/2 tablespoons per half). Refrigerate 4 hours or until set. When ready to serve, remove from fridge; cut each lime half in half with a sharp knife to form 2 wedges. Place sanding sugar in a large shallow dish; dip each lime wedge into sugar to lightly coat filling.
