CUCUMBER LYCHEE SAKE
Steps:
- Make ginger simple syrup by combining ginger, and 1 cup water and 1 cup sugar in a small saucepan and simmer until sugar has dissolved. Set aside to cool. Peel cucumbers and cut half of 1 into thin slices. Puree the remaining 1 1/2 cucumbers in a blender. In a shaker, combine sake, pureed cucumber, ginger simple syrup and lychee juice. Shake to combine and serve in ice filled glasses garnished with lychee fruit.

Steps:
- In small bowl, sprinkle gelatin over the sake and let soak for 5 minutes to bloom the gelatin.
- In a small saucepan over medium-high heat, bring the simple syrup and ginger just to a boil. Remove from the heat. Add the gelatin and sake mix, and stir to completely dissolve the gelatin. Stir in the vodka and lime juice.
- Carefully pour the mixture into a PLASTIC WRAP LINED 8" square glass baking dish. Cover tightly w/ plastic wrap, not touching the liquid surface, and refrigerate until the gelatin is completely set, preferably overnight.
- To serve, unmold the gelatin onto a parchment- or wax paper- lined baking sheet. remove the plastic wrap and cut gelatin into desired shapes. i like to use a 1 inch round cutter to cut the gelatin into squares.
- Serve each piece on a slice of cuke and top with gold and/or ginger.

- Cut cucumber crosswise into three equal pieces. Peel and chop 2 pieces, then put into a blender. Peel 4 lengthwise strips from remaining piece, leaving stripes of green, then halve piece lengthwise and core. Thinly slice crosswise.
- Add water, sugar, fresh ginger, and lemon juice to blender and purée until smooth. Pour through a medium-mesh sieve into a pitcher, then stir in sake, crystallized ginger if using, and cucumber slices. Chill, covered, until ready to serve, up to 2 hours. Serve over ice.

- Using a sharp paring knife, carefully cut out the center of each lime half, removing as much white pith as possible. Arrange lime halves, cut side up, in cups of a mini muffin pan to create a stable base for halves.
- Combine sugar, water, basil, mint, and cucumber in a medium saucepan over medium heat. Bring to a simmer; cook, stirring constantly, until sugar dissolves completely. Remove from heat; let stand 5 to 7 minutes. Strain; cool syrup completely; discard solids.
- Combine syrup, cucumber juice, and lime juice in a medium saucepan over medium-low heat. Sprinkle gelatin evenly over top; let soften 1 minute. Increase heat to medium; cook, stirring constantly, until gelatin dissolves completely. Remove pan from heat; stir in sake.
- Pour mixture evenly into lime halves (about 2 1/2 tablespoons per half). Refrigerate 4 hours or until set. When ready to serve, remove from fridge; cut each lime half in half with a sharp knife to form 2 wedges. Place sanding sugar in a large shallow dish; dip each lime wedge into sugar to lightly coat filling.
