2 tablespoons fresh lemongrass, peeled and thinly sliced (or substitute 1 tbsp. fresh lemon peel)
2 tablespoons fish sauce
1 tablespoon brown sugar
1 teaspoon lime juice
1/2 teaspoon thai chili paste (such as Dynasty)
2 shallots, peeled
1 garlic clove, peeled
1 swordfish steak (1 1/2 pounds, about 1 inch thick)
cooking spray
fresh cilantro stem
lemon wedge

Steps:

  • Preheat broiler. Combine first 9 ingredients in a food processor; pulse 3 times or until coarsely chopped. Place fish on a broiler pan with cooking spray; spread 1/2 cup shallot mixture evenly over fish. Broil 15 minutes or until fish flakes easily when tested with a fork. Bake white fish in an aromatic paste of chilli, ginger, coriander, lime and creamed coconut, for a quick, Asian-inspired midweek meal

2 limes
100g creamed coconut from a block, chopped
1 green chilli , deseeded and roughly chopped
handful coriander
large knob of ginger , peeled and chopped
2 garlic cloves , chopped
½ tsp fish sauce , plus extra to taste
4 pieces white fish , skin on (we used sustainable cod)
steamed rice , to serve
thin-stemmed broccoli , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Zest and juice the limes. In the small bowl of a food processor, whizz together the lime zest and juice with the remaining ingredients, except the fish, until a smooth paste forms. Taste and add a little more fish sauce if you feel it is needed.
  • Put the fish on a baking tray and spread over the coconut mixture. Bake in the oven for 15-20 mins until the fish is cooked through. Serve with steamed rice and thin-stemmed broccoli.

1/4 cup fresh lime juice
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon minced peeled fresh ginger
1/2 teaspoon grated lime peel
2 6-to-7 ounce swordfish steaks (each about 3/4 to 1 inch thick)
Lime wedges

Steps:

  • Whisk first 5 ingredients in glass pie dish to blend. Add fish; turn to coat with marinade. Refrigerate at least 3 hours or up to 6 hours, turning once.
  • Preheat broiler. Remove fish from marinade; reserve marinade. Place fish on broiler pan or baking sheet. Sprinkle with salt and pepper. Broil fish until opaque in center, about 3 minutes per side.
  • Meanwhile, transfer marinade to heavy small saucepan. Boil marinade until reduced to thin glaze, about 6 minutes. Spoon glaze over fish. Garnish with lime wedges and serve.

A change from grilling, this crunchy lime flavoured swordfish worked well for me! Served with asparagus and baked potato, it made a nice light meal. Prep time includes marinade time.

2 medium swordfish steaks
1 lime, divided
3 tablespoons olive oil, divided
2 tablespoons flour
2 tablespoons cornmeal
1 tablespoon italian seasoning or 1 tablespoon cajun seasoning (optional)
1 tablespoon butter

Steps:

  • Marinade fish in juice of 1/2 lime and 2 Tbs olive oil for 1/2 to 3/4 hours Mix flour, corn meal and old bay seasoning.
  • Dredge swordfish in mix and shake off excess.
  • Heat 1 Tbs of butter and 1 Tbs olive oil in fry pan (cast iron being best).
  • Fry swordfish approx 4 minutes per side or until done.
  • Squeeze addition lime juice on swordfish if desired.
