MOROCCAN SPICED OLIVES

Moroccan Spiced Olives image

An easy marinade of garlic, lemon, thyme, and a dollop of the North African hot sauce harissa make these green olives memorable. If you can, prepare the olives ahead-they improve with age. From Epicurious. Cooking time does not include the 24 hour marinating period.

Categories     Moroccan

Time 25m

Yield 2 cups

Number Of Ingredients 8

2 cups green olives in brine, lightly smashed to crack open slightly (use picholine or cerignola if possible)
4 garlic cloves, sliced
1/4 cup olive oil, extra virgin
2 teaspoons tomato paste
1/3 cup water
2 teaspoons harissa (North African spice paste)
3 fresh thyme sprigs (4-5 inches long)
2 thin lemon slices

Steps:

  • Cover olives with water in a small saucepan and bring to a boil, then drain.
  • Cook garlic in oil in a 10-inch heavy skillet over medium heat until garlic is golden, about 2 minutes. Add tomato paste and cook, stirring, 1 minute. Stir in water, harissa, thyme, and olives and simmer briskly, stirring occasionally, until liquid is thickened and coats olives, about 5 minutes. Remove from heat and stir in lemon slices. Transfer to a shallow dish and marinate, chilled, at least 24 hours.
  • These will keep for 1 month if kept in an airtight container in the refrigerator.

MARINATED MOROCCAN OLIVES

Marinated Moroccan Olives image

Olives are abundant in Moroccan cuisine; often times they are marinated in olive oil and lemon, or in a Moroccan hot sauce called "harissa" (which is made from red chilis, garlic, coriander and cumin). For my olives, I am combining the best of both worlds by marinating the olives in lemon and olive oil, plus some of the seasonings found in harissa.

Time 12h2m

Yield 2 1/4 cups

Number Of Ingredients 8

1 cup black olives
1 cup green olives
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
3 garlic cloves, thinly sliced
1 teaspoon red pepper flakes
1/4 cup olive oil
2 lemon wedges

Steps:

  • In a medium sized mixing bowl, combine olive oil, pepper flakes, garlic, coriander and cumin. Squeeze the lemon juice and add the lemon wedges, the olives, and mix well.
  • Cover and refrigerate overnight. Leave out at room temperature for a few hours before serving.

BLACK OLIVES WITH HARISSA

Black Olives with Harissa image

The spicy North African condiment called harissa is often mixed with olives or served with salads, couscous, or tagines ? meat or poultry stews.

Provided by Food Network

Categories     main-dish

Time 10h15m

Yield 3 cups

Number Of Ingredients 9

1 pound oil-cured black olives (preferably Moroccan)
1 teaspoon cumin seed
1/2 teaspoon coriander seeds
1/2 teaspoon caraway seeds
2 hot red dried arbol chiles, stemmed but not seeded (about 2 inches in length)
2 garlic cloves
1/2 teaspoon coarse salt
1 medium red bell pepper, roasted, procedure follows, coarsely chopped
1 tablespoon olive oil

Steps:

  • In a colander rinse olives under cold water 1 minute and in a large bowl cover with cold water. Soak olives 4 hours to remove excess salt and drain well. To make the harissa: In a mortar with a pestle, an electric spice grinder, or a cleaned coffee grinder, grind seeds fine. If using mortar and pestle, add chiles, garlic, and salt and pound, to taste. If using a spice or coffee grinder, transfer seeds to a small food processor and add chiles, garlic, and salt. Grind mixture to a paste. Add pepper and oil and pound or puree to a coarse paste. In a large bowl stir together the harissa and olives and marinate, covered and chilled, at least 6 hours or overnight. Olives may be prepared 1 week ahead and kept chilled, covered. Serve olives at room temperature.
  • Roasted Peppers: Using a long-handled fork, char peppers over an open flame or on a rack set over an electric burner, turning, until skins are blackened, 4 to 6 minutes. (Or to broil peppers on rack of a broiler pan under a preheated broiler about 2 inches from heat, turning every 5 minutes, 15 to 20 minutes, or until skins are blistered and charred.) Transfer peppers to a bowl and let stand, covered, until cool enough to handle. Keeping peppers whole, peel them, starting at blossom end. Cut off pepper tops and discard seeds and ribs.
