STEAMED STRIPED BASS WITH GINGER AND SCALLIONS



Steamed Striped Bass with Ginger and Scallions image

One 2- to 3-pound whole striped bass, scaled and gutted (fins and gills removed)
Nonstick cooking spray
Kosher salt and white pepper
4 Chinese black mushrooms, soaked in warm water until softened, sliced thin
2-inch piece ginger, finely sliced like blades of grass
4 baby bok choy, quartered
1/4 cup (60 ml) water
3 tablespoons (45 ml) thin soy sauce
1 tablespoon (15 ml) chicken bouillon powder
1 tablespoon (15 ml) Shaoxing rice wine
2 teaspoons (10 grams) sugar
1 teaspoon sesame oil
3 scallions, finely sliced like blades of grass
2 tablespoons (30 ml) sesame oil
2 tablespoons (30 ml) canola oil

Steps:

  • For the striped bass: Preheat the oven to 325 degrees F. Spray the bottom of a large baking dish with the cooking spray.
  • Rinse the fish with cold water and pat it dry. Place it in the prepared baking dish. Season the fish with salt and white pepper. Scatter the sliced mushrooms in the dish. Sprinkle the sliced ginger over the fish and arrange the baby bok choy pieces around the fish, like a frame.
  • For the sauce: Stir together the soy sauce, chicken bouillon powder, Shaoxing rice wine, sugar and sesame oil in a small bowl. Pour this sauce over the fish, which will convert to aromatic steam, cooking the fish.
  • Pull a tight layer of plastic wrap over the baking dish and cover tightly with aluminum foil.
  • Bake until the fish reaches an internal temperature of 130 to 135 degrees F; the fish should flake apart gently, and the center should just be turning opaque, 15 to 18 minutes.
  • For after steaming: Check to see that the fish is done. Place the scallions on top of the fish and replace the foil to retain heat and moisture.
  • Combine the canola and sesame oils in a small saucepan and heat them to high until just smoking, about 2 minutes. Remove the foil and carefully drizzle the hot oil over the scallions and fish--it will sizzle. Finish by spooning the sauce over the fish.

Steamed Sea Bass with Shredded Pork image

Sea bass are generally found swimming in the tanks of Chinatown fish markets. They are usually small because the fishmongers also sell to restaurants, which typically like to steam the larger fish. Steaming, as I have noted, is the preferred way for cooking whole live fish. But if you are unable to find a live fish, fresh flounder, sole, or red snapper will do nicely for this recipe.

Number Of Ingredients 15

1 whole sea bass, 1 1/2 pounds, purchased live, then cleaned by the fishmonger
2 tablespoons light soy sauce
2 tablespoons white rice wine
1 tablespoon peanut oil
1 1/2 teaspoons sesame oil
1 teaspoon white rice vinegar
2 tablespoons peeled and shredded ginger
1/4 teaspoon salt
Pinch of white pepper
4 ounces pork loin, shredded
1 tablespoon sesame oil
1 teaspoon light soy sauce
1/2 teaspoon sugar
2 tablespoons Onion Oil
1/4 cup finely sliced scallions

Steps:

  • 1. Make sure the fishmonger has removed all of the scales, gills, viscera, and membranes from the fish. Rinse the fish well inside and out, then dry well. Place in a steamproof dish.
  • 2. To make the marinade, in a small bowl, mix together all of the ingredients. Sprinkle the marinade evenly on the inside and outside of the fish.
  • 3. In another small bowl, mix together the pork, sesame oil, soy sauce, and sugar. Sprinkle the mixture over the fish, and let rest for 10 minutes.
  • 4. Prepare a wok for steaming using a cake rack (place a cake rack over boiling water in a wok), place the dish with the fish on the rack, cover, and steam for 12 to 15 minutes, or until a chopstick slides easily into the flesh of the fish.
  • 5. Turn off the heat. Pour the onion oil over the fish and sprinkle with the scallions. Remove the dish from the wok, and serve the fish in its cooking dish.

1 vanilla pod
1 lemon, juiced and 1 lemon leaf
1 teaspoon extra-virgin olive oil
2 (8-ounce, 225 grams) sea bass fillets, skin on, scaled, pin bones removed and scored
8 baby leeks
4 ounces (115 grams) fresh peas
4 ounces (115 grams) fresh broad beans
8 small new potatoes, scrubbed and cooked
1 pint (565 ml) semi-skimmed milk
Sea salt and freshly ground black pepper

Steps:

  • Remove the seeds from the vanilla pod and place both the seeds and pod on a plate with the lemon juice and olive oil. Mix up with a fork, then place the fish on the plate and turn it so both fillets are covered. Place the vanilla seeds and lemon leaf on top of the fillets, reserving the vanilla pod.
  • Split the leeks down the middle, 1-inch from the end, and wash under cold water. Mix the peas, broad beans and new potatoes together.
  • Put the milk into a saucepan with the reserved vanilla pod and slowly simmer over a medium heat. In a bamboo steamer* place the leeks on the bottom, then cover with the pea mix. Sprinkle with salt and freshly ground black pepper, then place the steamer over the pan of milk. In a second bamboo steamer place the lemon leaf, and the fillets skin side up. Open up the score marks and pour over the juices from the plate. Place the lid on top and cook for 10 to 15 minutes on a slow simmer.
  • Remove the steamers from the pan, place some vegetables on each plate, and top with the fish. To finish the sauce, remove the vanilla pod from the milk and whiz up with a cappuccino frother or 'whizzer', or in a liquidizer. This gives the sauce a thick cappuccino effect, which is both visually and texturally very nice.

30g ginger , peeled and cut into matchsticks (use a julienne peeler if you have one)
1 whole large sea bass (about 800g), gutted and cleaned (ask your fishmonger to do this), or 4 fillets of sea bass
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp vegetable oil
1 tsp palm sugar
1 spring onion , sliced diagonally
½ small pack coriander , trimmed but still with most of the stalks on
½ red chilli , finely sliced diagonally

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put half the ginger in the cavity of the fish, then lay it on foil. Pull the sides of the foil up around the fish to create a foil bowl, then add 1 tbsp water (this will steam the fish), seal and cook in the oven for 15-20 mins or a large bamboo steamer until the fish is flaking apart.
  • Transfer to a serving platter, leaving the juices in the foil. Heat the soy sauces, oil and palm sugar in a saucepan with 1 tbsp water until boiling and bubbling. Top the fish with the spring onion, chilli, most of the coriander and the rest of the ginger. Pour the hot liquid over the fish to 'cook' the aromatics on top. Scatter over any leftover coriander stalks to serve.

1 1/4 teaspoon finely grated peeled fresh ginger
1/4 teaspoon finely grated orange zest, plus 2 tablespoons fresh orange juice
1/4 teaspoon ground coriander
2 teaspoons toasted sesame oil, plus more for baskets
1 tablespoon soy sauce
2 teaspoons rice wine (mirin) or sherry
2 (about 1/4 cup) scallions, finely chopped
Freshly ground pepper
2 fillets striped bass, red snapper, or bluefish (each 4 to 5 ounces, at least 3/4 inch thick), skinned
6 shiitake mushrooms, stemmed, caps scored with an X
3/4 pound edamame in shells (soybeans)
Sea or coarse salt

Steps:

  • Stir ginger, orange zest and juice, coriander, oil, soy sauce, wine, and scallions in a medium bowl. Season with pepper. Add fish and mushrooms; turn to coat completely. Marinate 10 minutes.
  • Fill 2 woks or large pots with about 1 inch of water. Bring to a boil. Brush bottom baskets of two 6-inch, 2-tiered round bamboo steamers with oil. Place 1 fillet and 3 mushrooms in a single layer in each bottom basket; place half the edamame in each top. Cover baskets; carefully set into boiling water. Steam until fish is just cooked through, 10 to 14 minutes, checking occasionally to make sure water doesn't completely evaporate. Sprinkle edamame with salt. Serve in baskets.

3 to 4 tung uk (chinese dried mushroom)
1 sea bass or red snapper, about 1 1/2 pounds
1 teaspoon of salt
3 to 4 slices Smithfield ham or 3 slices fat pork or 2 slices of bacon
1 small canned bamboo shoot
2 scallions
3 slices fresh ginger
1 tablespoon sherry

Steps:

  • Wash and clean tung ku. Soak in hot water for 20 minutes until softened. Drain and save 1 tablespoon of the liquid. Remove stem and cut into shreds.
  • Scale and clean fish. Keep the head and tail on if you want to serve the fish real Chinese style. Be sure fish is at room temperature. Cut slashes on 45 angle at inch intervals on both sides. Rub the fish both inside and outside with salt. Cut ham, bamboo shoot, scallions and ginger into fine shreds. Place fish on a serving plate or Pyrex plate. Spread tung ku, bamboo shoot , scallion, ginger and ham shreds over fish. Mix sherry with 1 tablespoon tung ku liquid and pour over fish. Steam over vigorously boiling water for 10 minutes. Test the meat in slashes. If meat flakes from the bone, it's done. Otherwise steam 5 more minutes. Garnish with Chinese parsley.

4 (6 ounce) skinless sea bass fillets (or any similar type fish about 6 oz each)
sea salt
1 pinch cayenne pepper
1/4 cup fresh ginger, cut into thin strips
1 cup finely sliced shiitake mushroom
2 tablespoons chopped fresh cilantro
4 green onions, sliced diagonally
2 tablespoons sesame oil (regular or chile-infused)
1/2 cup soy sauce

Steps:

  • Bring water to a boil under a metal or bamboo steamer.
  • Sprinkle sea bass with salt, black pepper, and cayenne; place on a piece of parchment paper inside steamer.

1 piece fresh ginger (4 inches), peeled and roughly chopped
1 tablespoon oyster sauce
1 tablespoon sugar
2 tablespoons soy sauce
1 tablespoon unseasoned rice vinegar
1 tablespoon chile oil
Scallions, julienned, for garnish
Julienned fresh peeled ginger, for garnish
1/4 cup grape seed oil, heated
1 1/2 pounds sea bass, cut into 8 pieces, approximately 2 by 4 inches each
2 tablespoons sacha sauce (Chinese barbecue sauce)
2 tablespoons light soy sauce
1 tablespoon fresh ginger, peeled and minced
1 tablespoon minced garlic
1/4 cup grape seed oil, heated
1 tablespoon minced red finger chile
Coarse salt
8 leaves napa cabbage, tough stems removed

Steps:

  • To make the sea bass, place the fish in a baking dish just large enough to hold them in single layer. In a small bowl, mix together the sacha sauce, soy sauce, ginger, garlic, oil, and chile. Pour the mixture over the fish, cover, and let marinate refrigerated for 2 hours.
  • Bring a medium pot of water to a boil. Add a generous amount of salt, and bring the water back to a boil. Prepare an ice-water bath. Add the cabbage leaves to the boiling water, and cook until they are tender but still retain their crispness, about 1 minute. Remove the leaves from the water, and immediately plunge them into the ice-water bath. Allow the cabbage leaves to cool for about 1 minute in the ice-water bath, and then pat dry using paper towels.
  • Remove 1 piece of fish from the marinade; place on a cabbage leaf about 1 inch from the edge. Fold in the left and right edges of leaf, and then roll the fish up in the leaf to enclose completely. Place seam side down in a bamboo steamer basket. Repeat process with remaining fish and cabbage leaves.
  • Fill a large skillet with water and bring to a boil. Place bamboo steamer into the skillet and cover. Steam the fish until the edges of the fish are firm and white, about 6 minutes.
  • To make the sauce, place the ginger in a small food processor and process until pureed. Transfer the ginger puree onto a paper towel. Over a medium bowl, squeeze the ginger in the paper towel until all the ginger juice is extracted from the pulp; discard pulp. Add the oyster sauce, sugar, soy sauce, vinegar, and oil to the ginger juice and whisk together.
  • Place 2 of the wrapped fish rolls on each of 4 heatproof plates. Drizzle sauce around fish. Garnish fish with scallions and ginger. Carefully pour 1 tablespoon heated grape seed oil over scallions and ginger. Serve immediately.
