1 cup orange juice with lots of pulp, or more as needed
3 ripe, sweet apples, such as Red Delicious
One 8-ounce can crushed pineapple
1/2 cup frozen grated coconut, thawed
1/4 cup sugar

Steps:

  • Pour the orange juice into a medium bowl. Peel and core the apples, and then grate them into the orange juice using the large-hole side of the grater. Add the pineapple, coconut and sugar. Mix well, adding more orange juice if the mixture is not juicy enough. Store in the refrigerator until ready to serve. The apples will continue to absorb juice, and orange juice can be added as needed to keep it as juicy as you like. Dairy-, oil-, and gluten-free, and containing no refined sugars, my Easy Apple, Pineapple, and Coconut Ambrosia is simply divine! Ready in under 10 minutes, made with just 9 ingredients.

1 silken tofu (note 1)
½ canned coconut milk
1 vanilla pod
3 tbsp orange juice
2 tbsp maple syrup
150 g fresh pineapple (cleaned and chopped)
100 g raw cashews
1 large sweet apple (spiralised or chopped into small pieces)
15 g desiccated coconut ((keep a little back for garnishing))

Steps:

  • In a blender, blitz the tofu, coconut milk, vanilla seeds (or extract), orange juice, and maple syrup for a few seconds, until you have a smooth cream.
  • Place the spiralised (or chopped) apple, plus the pineapple, and most of the chopped cashews and desiccated coconut into a large bowl, then pour over the cream mixture.
  • Gently fold everything together, making sure everything is well-coated.
  • Spoon into four serving glasses or dishes, sprinkle over the rest of the coconut and cashews, and serve immediately.
  • This will also keep in the 'fridge for up to 24 hours, and actually tastes even better on the second day!

1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

1 cup chopped fresh pineapple
1 cup sliced fresh apples
1 cup orange slices
1 cup strawberries (sliced)
1 cup grapes
1/2 cup shredded coconut
1 tbsp. cornstarch
1/3 cup lemon juice
3 tbsp. sugar
3 tbsp. orange juice
1/2 cup soft (silken) tofu (pureed)
2 tsp. grated orange zest
Optional: 1 tsp. poppy seeds

Steps:

  • In a large bowl, toss the fruit and coconut until well blended. Refrigerate.
  • Combine the cornstarch with the lemon juice in a medium saucepan and stir until well blended. Place the saucepan over medium heat and add the sugar and orange juice. Cook, stirring constantly, until the mixture thickens, about 5 to 10 minutes. Remove the saucepan from the stove and allow to cool thoroughly.
  • Fold the pureed tofu, orange zest, and poppy seeds if using into the juice mixture and chill for at least 1 hour.
  • Immediately before serving, pour the dressing over the fruit and serve.

cherries for garnish

Steps:

  • Grate coconut in bowl. Add peeled and sectioned oranges; discard membrane and seeds. Add pineapple, fruit cocktail, apples, bananas, and nuts. Sweeten with sugar, being careful not to add too much as the syrup from the fruit is usually sufficient. Chill before serving. This dessert is pretty garnished with cherries and served in a crystal bowl.

6 navel oranges
1 pineapple, peeled, cored, and cut into cubes
1 cup coconut, shredded fresh, fresh frozen, or packaged sweetened, according to taste or tradition
1 large banana
1 small (4 1/2-ounce) bottle maraschino cherries, drained well (optional)

Steps:

  • Peel the oranges, taking care to remove all the white pith. Slice the oranges over a bowl or storage container so that you catch any juice, and add the slices to the bowl. Circular slices look prettiest, hold together best, and are easiest.
  • Add the pineapple and coconut to the orange slices and gently toss. The ambrosia can be refrigerated up to two days, covered.
  • When ready to serve, slice the banana and toss it with other fruits. Add the cherries last.
  • Serve the ambrosia in your prettiest glass bowl. It will become a tradition.
