1 ripe Mango (about 12 ounces)
0.5 unripe Papaya (about 9 ounces)
5 ozs Cape gooseberries
3 red onions (about 5 ounces)
1 pc fresh ginger (about 1 ounce)
1 green chili pepper
4 ozs cane sugar
0.25 cup White vinegar
0.5 cup filtered Apple juice
salt

Steps:

  • Rinse jars (each 8 ounces) and their matching lids with boiling water, then leave upside down to drain on a kitchen towel.
  • Peel mango, cut into slices, approximately 1/2 inch thick around the pit. Cut slices into small dice.
  • Peel papaya and scoop out the seeds. Cut into bite-sized pieces.
  • Remove outer husk of cape gooseberries.
  • Peel the onions and cut into approximately 1-inch dice. Peel and finely mince ginger root.
  • Rinse chile pepper and cut into very thin slices. (Remove seeds if you prefer less heat.)
  • Heat sugar in a pot, stirring, until it melts, then stop stirring and cook until caramel is light brown.
  • Add onions, ginger and chile. Stir in vinegar and apple juice and cook, stirring, until caramel has dissolved completely.
  • Add mango, papaya and gooseberries to pot. Simmer over low heat, stirring occasionally, for about 25 minutes. Season with salt and pepper.
  • Spoon hot chutney into prepared jars and secure lids. Let stand upside down for 5 minutes, then turn right sides up and let cool completely. Tip: To preserve for longer, process jars according to manufacturer's instructions. Chutney tastes best 2-3 months after preparation.

2 large firm but ripe peaches or nectarines (about 12 ounces total), halved, pitted, thinly sliced
2 small firm but ripe apricots or plums (about 6 ounces total), halved, pitted, thinly sliced
1 cup quartered pitted cherries
6 tablespoons sugar
3 tablespoons white balsamic vinegar
1/2 teaspoon garam masala*

Steps:

  • Combine all fruit in medium bowl. Add sugar, vinegar, and garam masala; toss gently. Let stand 1 hour at room temperature to allow juices to form and to blend flavors, tossing occasionally. 1/2 cup plus 2 tablespoons tamarind nectar
1/4 cup light-brown sugar, firmly packed
1/4 cup fresh lime juice
1 two-inch piece fresh ginger, peeled and grated
1 small clove garlic, minced or pressed
2 ripe mangoes, peeled, pit discarded, and cut into 1/2-inch dice
1/2 three-pound pineapple, peeled, cored, and cut into 1/2-inch dice
1 jalapeno pepper, seeded and minced
1 long hot red pepper, thinly sliced into rings
1/2 cup loosely packed cilantro leaves, coarsely chopped
Salt and freshly ground black pepper

Steps:

  • Combine 1/2 cup nectar, sugar, lime juice, ginger, and garlic in large skillet, and set over medium-high heat; bring to a boil, and reduce heat to medium; let simmer until syrupy, 8 to 10 minutes. Raise heat to medium high; add mango and pineapple. Cook, tossing, until fruit is glazed, about 10 minutes.
  • Transfer to bowl. Add jalapeno, red pepper, and cilantro; toss. Add remaining 2 tablespoons nectar to pan; scrape up cooked-on bits. Pour into bowl. Adjust seasoning. Serve immediately, or refrigerate up to a few days

1/4 cup red wine vinegar
2 tablespoons honey
2 tablespoons light brown sugar
1/4 teaspoon ground coriander
1 cinnamon stick (2-inch)
1 pinch ground cloves
1 small bay leaf
1 1/2 cups finely diced pineapple (1/2 inch slices)
1 1/2 cups finely diced mangoes (1/2 inch slices)
1 cup finely diced papaya (1/2 inch slices)
1 small garlic clove, minced
1/2 teaspoon finely grated fresh ginger
1/2 small scotch bonnet peppers or 1/2 small habanero pepper, minced
salt
fresh ground white pepper

Steps:

  • In a large saucepan, combine the vinegar, honey, brown sugar, coriander, cinnamon stick, cloves and bay leaf and bring to a simmer.
  • Add the pineapple, mango, papaya, garlic, ginger and Scotch bonnet and season lightly with salt and white pepper.
  • Simmer over low heat for 30 minutes.
  • Let cool.
  • Discard the cinnamon and bay leaf.
  • Serve at room temperature or chilled.
  • **The chutney can be refrigerated for up to 2 weeks.

1 1/2 cups chopped dried apricots
1 cup chopped dried cherries
1 cup pomegranate juice
2 cups water
Small pinch salt
2 chai spiced tea bags
1 cup toasted and chopped pecans

Steps:

  • Put the fruit into a medium heavy bottomed pot over medium heat. Add the pomegranate juice, water, and salt and bring to a simmer. Add the tea bags and simmer for about 40 minutes, until liquid has been mostly absorbed.
  • Remove the tea bags and discard. Stir in the pecans and transfer to a serving bowl. Serve warm or at room temperature and enjoy!

Yield Makes about 2 litres/3½ pints

Number Of Ingredients 14

900g plum
2 Bramley apples (about 550g/1lb 4oz)
450g pear
1large mango
900g muscovado sugar
500ml bottle cider vinegar
2medium onions (not red)
85g chopped stem ginger (from a jar of ginger in syrup, or crystallized)
3 garlic cloves , finely chopped
1 tbsp mustard seed
1rounded tsp ground coriander
1 tsp crushed dried chillies
1 tsp salt
1 cinnamon stick

Steps:

  • Halve, stone and chop the plums (about the same size as you would for an apple pie - not too big, not too small). Drop them into a large saucepan. Core, peel and chop the apples and pears in the same way. Peel, stone and chop the mango. Put all the fruit in the pan.
  • Stir sugar, vinegar, onions, ginger, garlic, mustard seeds, coriander, crushed chillies and salt into the pan, then drop the cinnamon stick on top. Heat slowly for about 20 mins, giving an occasional stir, until the sugar has dissolved. Now leave the chutney to simmer at a steady pace, without a lid, stirring occasionally until reduced and thickened, but still with a nice balance of syrupy juice. This will take about 1½ hrs. You don't want to cook it until all the liquid has gone, as it will thicken once it cools. Discard the cinnamon stick.
  • Using a heatproof jug, pour the chutney while still hot into sterilised jars. It will keep for about a year in a cool, dry place.

1 vanilla bean, split lengthwise
1 cup imported dry Sherry
2 cinnamon sticks
2 whole star anise*
1 cup 1/2-inch dice dried mango (about 4 1/2 ounces)
1 cup 1/2-inch dice dried papaya (about 4 1/2 ounces)
1/2 cup 1/2-inch dice dried pineapple (about 3 ounces)
1/2 cup raisins
Pineapple juice
3 tablespoons chopped fresh mint
3 tablespoons chopped fresh cilantro

Steps:

  • Scrape seeds from vanilla bean into heavy medium saucepan. Add bean, Sherry, cinnamon sticks, and star anise. Bring to simmer over medium heat. Add all dried fruits; return to simmer, stirring occasionally. Simmer until Sherry is almost evaporated, stirring occasionally, about 15 minutes. Remove from heat. Mix in enough pineapple juice by tablespoonfuls to moisten chutney. Transfer to bowl, cover, and refrigerate until cold, at least 3 hours. (Chutney can be made 1 day ahead. Keep refrigerated.)
  • Remove vanilla bean, cinnamon sticks, and star anise from chutney. Mix in mint and cilantro and serve.
  • *Brown star-shaped seedpods; available in the spice section of some supermarkets and at specialty foods stores and Asian markets.

15 cloves
15 pink peppercorns
2/3 cup distilled white vinegar
2 cups finely diced red onion (about 1 large onion)
1 teaspoon crushed red-pepper flakes
1 1/2 teaspoons kosher salt
2 cups sugar
2 tablespoons finely grated peeled fresh ginger
3 tablespoons finely grated lime zest, plus 2/3 cup fresh lime juice (from about 4 limes)
7 mangoes, (7 1/2 pounds total) peeled, pitted, and cut into 1/2-inch chunks

Steps:

  • Cut a 4-inch square of cheesecloth. Place cloves and peppercorns in center, and form a bundle; secure with kitchen twine. Place bundle in a low-sided 6-quart saucepan. Add vinegar, red onion, red-pepper flakes, salt, and sugar. Bring to a boil, then reduce heat to medium-low and simmer 15 minutes, stirring occasionally.
  • Stir in ginger, lime zest and juice, and mangoes. Continue to simmer over medium until mangoes begin to soften and liquid has thickened, about 40 minutes. Remove from heat. Transfer to a large bowl set over an ice-water bath to cool; refrigerate in an airtight container up to 1 month.
